This recipe is easy and delicious. In fact, it’s so easy that you can make it in less than 30 minutes. For this recipe we used boneless skinless chicken thighs because they taste better with brown rice than other parts of the bird do. But if regular breasts are all you have on hand, then go right ahead! You can even use ground beef instead if that’s what’s available at your local grocery store or butcher shop

Lemon-Sage Chicken and Rice

In a large bowl, combine the delicious rolls chicken and rice. In another small bowl, combine the sauce ingredients and whisk until smooth. Pour over chicken mixture and toss to coat. Transfer to an ovenproof dish and top with cheese. Bake at 350°F until heated through and cheese is melted, about 15 minutes or longer if needed (time depends on how thick your cuts are).

Preheat oven to 350 degrees F. In a large bowl, combine the chicken and rice with salsa, cumin and salt until well blended; spoon into a greased 9×13-inch baking dish (or 8×8). Bake uncovered for 30 minutes or until chicken is no longer pink and vegetables are tender; remove from heat.

You’ll need:

2 cups rice (we used jasmine)

1 tablespoon olive oil

1 large red bell pepper, cut into bite-sized pieces

4 green onions, sliced into 1/4-inch-thick pieces on an angle

2 tablespoons sesame seeds

You can use bone-in and skin-on if you prefer but be sure to remove any excess fat from the meat and pat it dry with paper towels. Heat a large skillet over medium heat and add in some olive oil. Season the chicken with salt and pepper then place it in the pan so that each piece has enough room to cook through without touching another piece. Cook until golden brown on both sides this should take about 5 minutes per side depending on thickness of your chicken breasts. Remove from heat once cooked through (they will have an internal temperature of 165 degrees F), then slice horizontally across each breast into thin strips before serving over rice noodles or quinoa!
